Pumpkin Cheesecake Hand Pies



  • 2 refrigerated pie crusts (14.1 oz boxes)
  • 1 cup canned pumpkin purée
  • 2 tbsp light brown sugar
  • 1 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract
  • 1/4 cup Bruegger’s Pumpkin cream cheese*
  • 1 large egg yolk
  • 1 large egg, beaten

  • 1/4 cup Bruegger’s Pumpkin cream cheese*
  • 3 tbsp powdered sugar
  • 1-1/2 tbsp whole milk


  1. In a medium nonstick saucepan over medium-high heat, mix together pumpkin purée, brown sugar, pumpkin spice and vanilla extract to make the pie filling. Stirring constantly for 5 minutes so the excess moisture from the puree evaporates slightly. Set aside to let it cool completely. Stir in pumpkin cream cheese and large egg yolk until the filling is smooth and creamy.
  2. Preheat the oven to 350F.
  3. Cut 32 rounds from the refrigerated pie crust using a 3.5” round scalloped cookie cutter. You will get eight 3.5″ rounds per pie crust. (There are two pie crusts per box.)
  4. Add a generous tablespoon of pumpkin filling to each of the 16 rounds. Top each round with remaining pie crust rounds. Use the prongs of a fork to gently press the doughs together and form a seal on each of the pie rounds.
  5. Use a small knife to poke 3-4 thin slits on top of the rounds. Brush each pie round with the large beaten egg.
  6. Transfer pie rounds to a nonstick baking sheet. In the center rack of the oven, bake for 17 to 20 minutes or until the crust is golden brown. Let it cool to touch before glazing.
  7. To make the glaze, stir together all of the ingredients until well incorporated and smooth.
  8. Add desired amount of glaze onto each round. (I just brushed about two teaspoons onto a few them since I am picky about the level of sweetness.)
  9. Let the glaze firm up before serving, about 15 minutes.
