Poached Egg & Smashed Avocado on Challah


  • 1 loaf of butter-toasted challah bread
  • 1 small avocado, smashed
  • 1 tomato, sliced
  • 1 poached egg
  • 1 tbsp Bootleg Everything Bagel Seasoning
  • 1 tbsp olive oil


1. Lightly butter the slice of challah bread and toast under the broiler until golden brown
2. Place a pot of water on the stove until a simmer 185 degrees
3. Gently add the raw egg to the simmering water and cook until the yolk is slightly set, but still runny and the white has set
4. Peel the avocado and remove the pit carefully and reserve
5. In a small bowl smash the reserved avocado meat until very chunky
6. Place the smashed avocado on top of the toasted challah bread
7. Place the seasoned tomato slice on top in the center of the smashed avocado
8. Place the hot poached egg in the center of the seasoned tomato slice
9. Generously season the egg and the rest of the dish with the everything seasoning
10. Drizzle the built dish with the extra virgin olive oil coast to coast
