Bruegger's Expands Bakery-Cafe Experience In Eagan
New restaurant opens in Eagan Transit Station:
Portion of grand opening day proceeds to benefit Eagan Athletic Association
EAGAN, Minn. (May 18, 2007) - Today, Lonjen, Inc., a Bruegger's franchisee, celebrated the grand opening of the newest Bruegger's bakery-cafe in the Eagan Transit Station at 3450 Pilot Knob Road. The Lonjen franchise group, led by principals Tom Jenkins, Walter Lonjen and Troy Lonjen, welcomed local business people, friends and family for a sneak preview party on Thursday night. A portion of the proceeds from today's grand opening celebration will be donated to the Eagan Athletic Association, a non-profit organization dedicated to the development of the community's young people through athletics.
The Eagan Transit Station location has seating for more than 40 guests and will employ 15 people. This location features Bruegger's new bakery-cafe design which utilizes a soft color scheme, emphasizing natural textures and warm tones balanced with bright colors to make an inviting space for guests. The bakery also features free wireless Internet for guests.
To mark the occasion the Lonjen group was joined by representatives from Bruegger's, the Eagan Chamber of Commerce and the mayor's office for a ceremonial ribbon cutting during the sneak preview event on Thursday night.

Kettle boiled first, Bruegger's bagels are baked fresh throughout the day to give them an authentic crunchy crust on the outside and a dense, chewy texture on the inside. In addition to fresh, hot bagels, Bruegger's offers an extensive menu that includes hand-crafted, fresh-tossed salads, made-to-order sandwiches and unique coffee blends, including a daily Fair Trade Certified blend. Bruegger's is one of the largest distributors of Green Mountain Coffee Roasters Fair Trade Certified coffee.
The Lonjen group has been a Bruegger's franchisee since 2005 and currently operates another Bruegger's location in Hudson, Wisconsin. Their franchise agreement includes the development of three bakery-cafes.
More than 100 of Bruegger's 256 locations are operated by franchisee owners.
The bakery is open Monday through Friday from 5:30 a.m. to 8:00 p.m. and on Saturdays and Sundays from 6:30 a.m. until 5:00 p.m.
