Bruegger's bagels are genuine, New York-style, kettle boiled bagels. We make them the way bagels are supposed to be made, starting with the purest, highest quality ingredients: high protein unbleached wheat flour, fresh (never powdered) yeast, malt syrup, water and salt. We make only authentic, old-fashioned, kettle-boiled bagels every day in every one of our bakeries.

Bruegger's bagels are formed from fresh dough and kettle boiled before they are baked. Then we bake them in a stone hearth, not on a rack, so they bake evenly. That gives them that authentic, almost-crunchy crust on the outside and a dense, chewy texture on the inside. It's such a satisfying combination to sink your teeth into!

Our bagels are baked just before you walk in the door, not just once a day before you wake up. That means you will almost always find a bagel flavor you want that is fresh and warm right from our stone hearth oven. We're fanatics about the quality of our bagels, so you won't find any cracked crusts, flat bottoms, blisters or burnt spots on them. If the bagels aren't just right, we don't serve them. No wonder people who know their bagels say, "Bruegger's bagels bakers bake a better bagel!"

When you buy a baker's dozen of bagels from Bruegger's to take to your office or home to enjoy, we'll put them warm into a paper bag. That's because our hot-from-the-oven bagels need to breathe! Placing a warm bagel in a plastic bag before it has time to cool may cause unwanted dampness. We will, however, put a plastic Freshness Bag in your paper bag, in the unlikely event that you have any left over. That way, when the bagels are cool, you can store them properly.

Once your bagels are cool, place them in your Bruegger's Freshness Bag, seal it tightly and store it at room temperature. Your bagels will still taste fresh and will last that way for up to 24 hours.
If you plan to freeze your bagels, we recommend slicing them first. Then place them in the Freshness Bag, seal it tightly and freeze! When you're ready for a bagel, pull one out and reseal the bag tightly. Your frozen bagel will require a little bit of toasting, but please don't put it in the microwave! Microwaves are not bagel-friendly.
- DO keep your cool bagels in the special Freshness Bag provided and seal it tightly
- DO remove as much air as possible when sealing the bag
- DO reclose the bag promptly once opened
- DO slice your bagels before freezing, or ask someone at Bruegger's to slice them for you
- DON'T put your Bruegger's bagels in the fridge
- DON'T microwave your bagels
- DON'T store Onion, Garlic or Everything bagels with milder flavored bagels (unless you want them all to taste like onion and garlic!)
- DON'T leave your bagels open on the kitchen counter. Thankfully, our bagels do not contain preservatives!
- It's OKAY to store your bagels for up to 24 hours at room temperature, as long as they are sealed in a Freshness Bag.
- It's OKAY to toast your bagels right out of the freezer.
